Ceylon Cinnamon is very different to Cassia Cinnamon and far healthier, primarily because it has low Coumarin levels. This is called as real, sweet or good cinnamon. It is produced in Sri Lanka from the plant called Cinnamomum Zeylanicum. It is light brown in color and thin and soft in appearance. The sticks are filled like a cigar with several folded layers. The amount of coumarin content is only 0.0004%.
Ceylon organic cinnamon can differentiate easily from cassia cinnamon, because it has Soft texture, easily broken, soft and sweet aromatic, generally safe, soft in appearance, several folds of layer like a cigar.
